This course covers the following topics, in-depth: sanitation, administration, management, nutrition and review for certification.Sanitation includes HACCP principles and students are prepared to take the NRA certification exam. Administration addresses communication, personnel supervision and development, health regulations, business practices and marketing. Management addresses food production and service, menu planning, recipe development, equipment, purchasing, financial controls, computers and safety regulations. Nutrition addresses nutrient functions, therapeutic diets, nutritional assessment, care planning, and patient education. Review for Certification prepares students for the credentialing exam by reviewing topics in each of the program sections.
