Choux pastry or puff shells is a quick and easy pastry to make for desserts, appetizers or small meals. You will learn the traditional sweet custard filled shell for dessert and profiteroles filled with a creamy mushroom duxelle with bits of toasted walnuts or creamy spinach and ham, as well as Gruyere cheese "gougeres" that make very impressive appetizers.
