CA 135 — International Cuisine
The study of classical cooking skills associated with the preparation and service of international and ethnic cuisines. Menu research and planning and authentic reproduction of ethnic menus is covered. Students will study various international cuisines along with special features of geography, climate, religion, and culture that influence regional cooking.
