This course will enable the student to independently operate a food truck. The student will learn to create and execute a variety of food truck menus while maintaining a focus on concept, guest, and location. The student will prepare food while operating a food truck. The student will lead and supervise food truck staff while delegating roles and responsibilities to each team member. The student will learn to evaluate operational functionality, product quality, and team performance.
