HMGT 187 - Food & Beverage Cost Control HMGT 187 - Food & Beverage Cost Control Total Hours: 45 In this course, students learn foundational principles and procedures for managing resources in the hospitality industry. Students learn the skills and strategies that form the basis of an effective system of food, beverage, and labour control. They will learn how to develop a budget by calculating food and beverage costs and learn practices to maximize profitability while incorporating sustainability measures. Students will engage in learning opportunities, including case scenarios and hands-on inventory projects in Camosun College’s Dunlop House restaurant.
