HMGT 285 - Integrated Restaurant Management HMGT 285 - Integrated Restaurant Management Total Hours: 187.5 Delving deep into the inner workings of a fine dining restaurant, Camosun’s Dunlop House, students will gain first-hand, practical experience in the day-to-day operations of effective restaurant management. They will learn how to create exceptional dining experiences. Demonstrating both teamwork and initiative, students will learn from each other as they share the knowledge gained as they rotate through key roles and responsibilities. Students reflect on their personal leadership styles and skills, developing accountability, planning and organizational skills. They learn to execute curated food and wine menus, while simultaneously developing skills in financial analysis, cost control, purchasing, and storage procedures. A cornerstone of this highly applied course is the peer coaching model in which students reflect on their experiences and mentor their peers. Prerequisites All of: C in HMGT 184 C in HMGT 190 Or all of: Bachelor degree from a recognized post-secondary institution
