AGRI 1415 — Livestock and Carcass Evaluation
This course provides an overview and in-depth evaluation of carcass traits among livestock species live and on a carcass. Students also learn how to calculate yield grade, percent of retail cuts, and price based on the other calculations. Students will also learn how to estimate quality grade on a carcass and on a live animal among the livestock species. Additionally, the students will learn how to evaluate retail cut and primal characteristics.
