Cakes and Cake Decorating This course provides students with instruction and hands-on practice in the production and decoration of cakes using commercial baking techniques. A variety of cake mixing methods are taught. Decorating instruction begins with letters, borders, and simple flowers, and progresses to the decorating and assembly of a tiered wedding or special occasion cake. Sanitary practices and compliance with the laws and ordinances of the New Y ork State Department of Health are enforced. Students are required to have a School of Hotel, Culinary Arts, and Tourism approved culinary knife kit and uniform, pastry bags, and piping tips. PR: HOT 119
